Chocolat Bonnat. I’ll never forget the evening when I was 16 years old. My aunt returned from France and brought me 6 packs of dark chocolate as a souvenir. She knew very well that ever since I was a child, dark chocolate was my only ‘candy’. My curiosity was highly raised by the unique idea that she had found 6 different variations from a single brand, and all at 75% cacao, which I had never seen before, till that evening.

I didn’t hesitate a moment and carefully opened one wrap, and then another one, and to my instant surprise these bars from Bonnat were all but the classic cacao candy, but rather I’d say … tasting experiences! While I was regaling them by small bites, after having drunk a glass of body-temperature water to get the perfect chocolate-ready-mouth condition, all these different flavours started tantalizing my senses.
One bar smelled like the pie cake my mother used to make, while the next one already was spreading flavours of fresh cacao beans. When one particular bar turned from hot to cold and back to hot in your mouth, other bars felt crunchy or soft, with each bite each time a different ‘croque’ character. Some melted away instantly on the middle of your tongue, when other ones preferred to treat every single tooth on a cacao fiesta before letting go its deepest aromas.
This was the moment when my ‘chocolate’ became ‘Cacao’. From that evening dark origin cacao truly became a passion and something to muse about every single day.
